Given that Scott Sartiano is behind some of the buzziest nightlife spots that New York has ever seen, being out and about in town is a job requirement, to say the least.
“It feels like I’m never not out,” he says.
Sartiano’s current venues include the private members club Zero Bond in NoHo, where celebrities and boldfacers are a mainstay and the waiting list to get in runs in the thousands, and the see-and-be-seen Italian eatery Sartiano’s at the Mercer hotel in SoHo, acclaimed by scenesters and critics alike.
Further uptown, Sartiano’s company Bond Hospitality runs the food and beverage program at the Park Lane New York hotel. Then there are his previous ventures that are now closed but still rank high in the list of coveted after-dark places in the present or past: 1 Oak with locations in New York. Las Vegas, and Los Angeles and the Darby.
Next up, Sartiano, 49, is opening a lounge, SubMercer, at the Mercer and has another Zero Bond in the works in Las Vegas.
Sartiano, who lives in NoHo, shares a few of his favorite things with Penta.

My neighborhood gems are… Café Leon Dore, next to Aime Leon Dore, which is one of the hottest fashion stores right now. I don’t drink coffee, but the vibe and the pastries at Leon Dore are great. I also like Bond Street for sushi—it’s a Noho classic—and the Evolution Store, a gift store with the coolest stuff like fossils. And of course, I go back and forth between Zero Bond and Sartiano’s.
You can get a membership to Zero Bond by… knowing people in the Zero Bond ecosystem and coming with them often. The more we see you, the more likely you are to get in.
The insider tip for getting a prime-time dinner reservation at Sartianio’s is… to be a regular at the restaurant and get to know the team that works there. Or be a guest at the Mercer. The best bet is to go for lunch or non-prime time and get to know the staff. Or call the restaurant directly rather than emailing or trying to book online. We are a relationship-driven restaurant and love meeting and getting to know new future regulars.
You’re most likely to find me drinking… a Tuscan old-fashioned cocktail that’s made with bourbon, grappa, and a blood orange grappa reduction.

The best night out is… going to a nice dinner out with my wife where we don’t know anybody.
My favorite kind of customer… is a regular who is nice to staff and brings interesting people with them.
When I’m not at Zero Bond or Sartiano’s, you’ll find me hanging out at… Cucina Alba for great Italian food and Temple Bar for drinks.
The last great trip I took was… to Paris with my wife and kids. It was amazing. Paris is such a magical city—the museums, architecture and food make for an incredible few days away.
The restaurants that are worth traveling to around the world are… Lo Scoglio Delle Sirene in Capri for the pasta dishes and everything else amazing on the menu.
I get away from it all by… hanging out with my five-year-old son Henry. Just doing anything with him is an escape whether it’s going to a museum or Central Park.
People are surprised to learn that I… love football and have never missed watching a Steelers game in 20 years.
My secret vices are… poker. I play weekly at Zero Bond.
